This weekend was filled with family time, helping (or attempting to help) my husband with yard work, and creating some new recipe creations with some new toys that I got!
My parents came in town for the Dave Barnes concert as a late birthday present for my dad and I am extremely jealous that we didn’t go with them! Now that Thomas and I have a house and my sister’s house is filled with a toddler and a baby, we get to be the hosts for them, which means I get two more test tasters for all my random kitchen tries. My mother had requested I make the banana bread that I had just posted about and so I did. I am well aware that my mother is allergic to nuts but apparently was not thinking it through when I poured the CASHEW milk into the mix! Luckily, I caught my mistake before my mom was needing to be rushed to the hospital and I decided on plan B for Saturday morning with some egg casserole cups!
Saturday my mom treated my sister and I to a Target run, so the girls (my nieces included) and my dad took over Target....have I mentioned how much I love my parents? My dad just sits there patiently or ventures over to the technology section but never complains that we need to hurry up; while my mom is watching the babies so that Devin (my sis) and I can explore every section.
I have not been to Target in soo long that it was a treat just being there, and we all know it is easy to get lost and spend way more on stuff than what you came in for, especially when you start your trip with a Caramel Machiatto (give me all the caffeinnnnnne)!
I left the store with a couple of new Fall clothing items for our Iceland trip and some fun kitchen gadgets. One of these gadgets was a spiralizer and after playing with it once I got home I don’t think we have any vegetables left to eat that aren’t spiralized....I mean I went spiralizing crazy!!
After Target, my parents went to babysit the kids so that my sister and her hubs could go on a lunch date and I headed back to the house to help my husband with yard work. He is building a fence and had to dig the holes for the posts yesterday so I volunteered to mow the lawn. I then also voluntarily broke the lawn mower as well.
Now only half the lawn in the front and backyard is mowed sooo we are looking like one classy house right now (sorry to all my neighbors). Not exactly sure what I did but it may have involved putting too much of the wrong kind of oil in haha! Hopefully we can get it fixed soon and fix our mohawk looking yard.
I decided to retreat back inside to the kitchen and continue with my cooking/creating/spiralizing. I have some fun recipes coming your way and I think you can guess that one of those things involves some spiralized veggies.
Saturday was SO HOT...like every day lately here in Nashville. I have found my new favorite afternoon pick me-up that is refreshing and delicious on these hot summer days.This Blueberry Lemonade Tea, inspired by my coworker Bridgett, gives me a good little dose of caffeine without keeping me up at night and since Thomas and I were going to have to run (since we have started training for another half-marathon), I decided I needed to make it!
I have never been a big hot tea drinker so my heart was won over with some addition of ice and a cute mason jar cup! THIS is seriously so yummy and refreshing that I may just have to drink it every single day! Green tea is not only a source of caffeine (which I love) but it is also a good source of antioxidants!
What Do You Need?
- Yogi Bluberry Tea
- 2 packets Spenda (or your substitute sugar of choice)
- 1/2 lemon squeezed
- 1/4 cup blueberries (optional)
How Do You Make It?
- Pour hot water over the tea bag and let it steep.
- Let cool (I would just make a bunch ahead of time and then stick it in the fridge to use late).
- Add the lemon, Splenda, and blueberries.
Now we are spending the rest of the weekend relaxing, sipping on coffee, and getting ready for the week (oh and trying to fix the lawn mower, of course)!
