I have to be completely honest. I have not tried out this whole energy ball craze until recently. I probably have ten different recipes for them pinned on Pinterest but haven't really put any of them into action. I finally tried them yesterday and put my own spin on them.
So many different thoughts came to mind after making these amazing little balls of heaven. One of those being, "WHY have I missed out on this heavenly piece of joy for so long?" They are so easy, healthy, and delicious. My other thought? I could eat my weight in these things sooo quicky (so make/eat with caution).
These energy balls are packed with omega-3s, protein, and fiber! This makes for a great snack between meals that will keep you fuller longer! If you haven't tried out energy balls, now is your chance! Just remember to practice your self control when wanting to reach in for another 5 balls. Try and stick to just one or two each day!

What Do You Need?
- 1 cup rolled oats
- 1/2 cup ground flaxseed
- 1/3 cup honey
- 1/2 cup Coconut Peanut Butter (I use Earth Balance coconut & peanut butter spread), you can also use regular peanut butter and add 1/2 tbs of coconut oil
- 1 tsp vanilla extract
What Do You Do?
- In a large bowl, mix all the ingredients together.
- After all the ingredients are well mixed, form small sized balls with your hands and place them on a baking sheet.
- Place the baking sheet in the freezer for about 1 hour and ENJOY!
