It has been a while since I have put a recipe up on the blog. Honestly, I have not really been in the cooking or baking spirit since I found out I was pregnant. A lot of that has to do with feeling so nauseous all the time in the first trimester and the only thing that sounded good were things that I didn’t make. A lot of eating out was happening for a good month and I am not ashamed to admit it...because pregnancy, duh.
Seriously though, I didn’t really like any recipes I would put together so I signed up for Hello Fresh again so that I had at least 3 meals that I didn’t have to create and I knew I would eat. The other 2 days I try and put something together that is fresh and easy...well, and I am finally not having any serious food aversions and feeling really good so that has helped.
Breakfast has been my main challenge because I feel like I get so hungry in the mornings even after eating breakfast. I have to make sure my breakfast is nutritionally dense so that it helps to fill me up and keep me satisfied; although, that doesn’t really stop my mid-morning snacking.
I finally got back in the kitchen and started preparing some overnight oats so that I knew I had something good and nutritious to eat each morning. THESE THOUGH. These Peaches & Cream overnight oats have been my FAVORITE. They are like that yummy packaged, sugary oatmeal everyone loves but even better. Also, this definitely fills me up more than just oatmeal because I add some extra ingredients to it.
What Do You Need?
- 3/4 cup rolled oats
- 1 cup Almond Milk
- 3 tbsp of vanilla flavored protein powder or one large scoop, I use JuicePlus Protein Powder packs
- 1 tbsp flaxseed or chia seeds
- 1/2 cup fresh peaches, cubed (and extra slices for the topping)
How Do You Do It?
- Mix together rolled oats, almond milk, protein powder, flaxseed, and cubed peaches in medium bowl.
- Pour mixture into storage containers (I use mason jars), and place in fridge over night.
- Pull out of fridge in the morning, and place sliced peaches on top. And now you can ENJOY!!!
I am sad that peach season is coming to an end but I am determined to use them all up in yummy recipes before they are all gone. I also made some fun energy bites with peaches mixed in that I will be sharing on here as well.
