The Easter festivities are over and now you are left with dozens of colored boiled eggs that you are not too sure what to do with. To be totally honest, I only really liked painting the eggs as a kid. Eating the eggs was never really my thing. I am pretty sure I always gave my brother my eggs from my basket because I just never really liked the taste of the yolk (plus trying to peal them can be a big pain in the butt). I still struggle to eat boiled eggs even though I know they can be the perfect snack or addition to meals and are a great source of omega-3’s and protein. I reallyyyyy want to like them, I really do sooo now I am on a mission to find recipes that I don’t hate.
Deviled eggs were also another one of my least favorite things to eat as a kid (and even now), so it is pretty interesting that this is the kind of recipe I decided to try out. I can assure you though, my opinion on deviled eggs and boiled eggs has forever changed thanks to the help of my best friend, Mr. Avocado.
YA’LL, these are so good and I am convinced that this is going to be the beginning of a beautiful friendship with boiled eggs. I got all excited thinking of all the other recipes that I can create with these boiled eggs that we may have some more recipes coming your way soon. For now though, we will stick to these delicious and nutritious avocado deviled eggs!
What Do You Need?
- 3 boiled eggs
- 1 avocado
- 1 tbs lime juice
- 1 tsp garlic
- 1 tbsp chopped onion
- 1 tsp cilantro, chopped
- crushed red pepper
- salt and pepper to taste
How Do You Do It?
- Cut boiled eggs in half and pull out the egg yolk, placing it in a medium sized bowl.
- Add chopped avocado, lime juice, onions, garlic, cilantro, and salt & pepper to bowl. Mix all ingredients well with a fork, smashing up the avocado and egg yolk.
- Add the avocado egg mixture to egg whites and sprinkle with crushed red peppers to add a little spicy kick.
